1 ½ lbs catfish fillets
1 egg
Garlic salt
½ cup flour and cornmeal
Cayenne pepper, salt, and pepper
Vegetable oil
Heat skillet with 1” oil. Mix flour, cornmeal and salt and pepper together in a flat dish. Rinse fish. Beat egg and dip fish in egg. Sprinkle both sides with garlic salt and cayenne pepper. Dip in flour mixture twice. Put fillets in oil and cook until golden brown and tender in the middle, about 8-12 minutes. Take fillets out of the skillet and drain on paper towels.
