1 1/2 lbs catfish fillets
1 egg, slightly beaten
Garlic salt
1/2 cup flour and corn meal, mixed together
Seaoning mix: Cayenne pepper, salt and pepper, to taste
Vegetable oil
Heat skillet and 1 inch of vegetable oil. Wash catfish and dip into egg. Sprinkle with seasonings and dip in breading twice. Place in hot oil and cook until golden brown and tender in the middle, about 8-12 minutes. Take fillets out of skillet and allow to drain on paper towels.
