  • 1 cup butter, softened
  • 1/2 cup shortening
  • 3 cups sugar
  • 5 eggs
  • 3 1/2 cups all-purpose flour
  • 1 can (12 ounce size) ginger ale
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon juice

Preheat oven to 325 degrees F. Grease 2 loaf pans.

Combine the butter and shortening in a large mixing bowl. Cream together with an electric mixer. With the mixer running, add the sugar, eggs, flour, ginger ale, vanilla, and lemon juice and mix until well combined.

Pour the batter into greased loaf pans and place in the middle of the oven. Bake at 325 degrees F for 1 1/2 hours or until the cakes test done.

Remove the ginger ale pound cakes from the oven and let cool completely in the pans.
