  • 1 tablespoon butter or margarine
  • 1 cup sliced fresh mushrooms
  • 1/3 cup chopped onion
  • 1 clove garlic, minced
  • 1 can (15 ounce size) diced tomatoes, undrained
  • 1 cup cubed cooked pork
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped red bell pepper
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1 pinch sugar
  • 1/2 cup uncooked instant rice

Melt the butter in a large skillet over medium-high heat and saute the mushrooms, onion, and garlic until soft.

Stir in the tomatoes, pork, red and green bell peppers, Italian seasoning, salt, and sugar. Bring to a boil then stir in the uncooked rice.

Cover the skillet and remove from the heat. Let it stand for 5-8 minutes or until the rice has absorbed the liquid.

Stir before serving and adjust seasonings as necessary.
