Leftover Pork With Rice And Vegetables

- 1 tablespoon butter or margarine
- 1 cup sliced fresh mushrooms
- 1/3 cup chopped onion
- 1 clove garlic, minced
- 1 can (15 ounce size) diced tomatoes, undrained
- 1 cup cubed cooked pork
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped red bell pepper
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1 pinch sugar
- 1/2 cup uncooked instant rice
Melt the butter in a large skillet over medium-high heat and saute the mushrooms, onion, and garlic until soft. Stir in the tomatoes, pork, red and green bell peppers, Italian seasoning, salt, and sugar. Bring to a boil then stir in the uncooked rice. Cover the skillet and remove from the heat. Let it stand for 5-8 minutes or until the rice has absorbed the liquid. Stir before serving and adjust seasonings as necessary.
