Old-style pimento cheese like Mama used to make sandwiches for school lunches. Until recently I had never thought of making my own, but it's so easy and so much better than the stuff in a jar.

Ingredients

8 ozs. Extra Sharp Cheddar Cheese, grated
2 Tbsp. Cream Cheese, softened is best
1/2 cup good quality mayonnaise
1 7-oz jar chopped pimentos, undrained
1/4 tsp. red pepper flakes
A pinch of salt if desired

Directions

Place all ingredients together and mix with electric mixer for 30 seconds, or just until blended. Chill before using.

This is good on sandwich bread, slider buns, crackers, as a dip (at room temp, and you'll want to use strong crackers or chips... Melba toast is perfect!), to stuff celery, etc...
