1 (4 oz) jar pimientos, with juice
1/2 – 1 cup mayonnaise
1 tsp Worcestershire sauce and finely grated onions
1/4 tsp red pepper
1 (8 oz) pkg shredded sharp Cheddar and white Cheddar cheeses
Salt and pepper
Mix the shredded cheeses together with the pimientos. Stir in the remaining ingredients until the mixture is well blended. Keep covered in the fridge until ready to use. Serve with corn chips or bread.
Variations: Jalapeno Pimiento Cheese: Add 2 seeded and minced jalapeno peppers.
Cream Cheese and Olive Pimiento Cheese: Use 3/4 cup mayonnaise. Stir together first 5 ingredients and 1 (8 oz) pkg cream cheese, softened and 1 (5 3/4 oz) jar drained sliced salad olives.
