Choose tubers that are common in size and shape. Scrub them, removing any spots and long "hairs". Wrap in buttered foil, and bake at 400"F for 1 - 2 hours depending on size. They should be tender all the way through. Then serve hot.

You can serve these either sweet or savory. For the sweet variation, top with a TBSP of butter, a Tbsp of brown sugar, a sprinkle of cinnamon, and a dollop of sweet or whipped cream.

For the savory version, top like a baked potato, with butter & sour cream (or Mexican Crema) and salt & pepper. Also either is good with cream cheese.

These go well with steak, pork chops, or other grilled meat.
