4 sweet potatoes
2 eggs
1/2 cup butter
1/2 cup shredded coconut and chopped pecans
1 cup raisins
1 apple, peeled, cored and chopped coarsely
3 tbsp brown sugar
2 tsp allspice
2 tbsp corn syrup or honey
1/4 cup shredded coconut and chopped pecans, garnish

Preheat oven to 350. Bake potatoes just until fork tender. Do not over bake. Scoop out inside of potatoes, leaving a thin shell, and mix the potato meat well with all ingredients. Spoon mixture back into the shells and mound slightly. Garnish and bake at 300-325 for 30 minutes. After baking, let stand 4-5 minutes before serving.
