1 bottle Annie’s Sesame Shitake Dressing
(or any Asian-inspired flavor - it should be slightly sweet or sweet & sour))
1 cup dried cherries
1 cup fresh blackberries
1 cup fresh raspberries
1 cup chopped pecans
1 small red onion, chopped fine
Enough baby spinach leaves to finish
In a large (at least a gallon) salad bowl mix the dressing to coat everything but the spinach. Then add the spinach a handful at a time until the bowl is filled completely, stirring to blend with each addition. Serve really quickly or the spinach will wilt. Note that other berries or chopped fruits may be used according to availability - Mandarin orange sections are a good substitute.
