BABY SPINACH SALAD AND APPLE SALAD WITH DRIED CHERRIES, WALNUTS AND BLEU CHEESE

3 tbsp extra virgin olive oil
2 tbsp apple cider vinegar
2 tbsp minced shallot
1 tbsp honey
1/2 cup dried cherries or craisins
a handful of baby spinach leaves for each bowl
1 medium Gala or Granny Smith apple, cored and thinly sliced
1/2 cup coursely chopped toasted walnuts
1/2 cup crumbled bleu cheese,* divided among 4 bowls

Whisk the first 4 ingredients in a small bowl to blend. Season the dressing with salt and pepper to taste. Stir in the dried cherries.

Toss the baby spinach and apples slices in a large bowl, add the cherry dressing and toss to coat. Divide among the 4 bowls, sprinkle with walnuts and bleu cheese. Serves 4

*Substitute Feta, Gorgonzola or Sharp Cheddar if you do not like Bleu Cheese.
