- 2 pounds ground beef
- 1 medium onion, chopped
- 1 cup sliced celery
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped red bell pepper
- 1 can (28 ounce size) whole tomatoes, undrained, cut up
- 1 can (6 ounce size) tomato paste
- 4 cloves garlic, minced
- 1 teaspoon salt
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon cayenne pepper
- 1/2 teaspoon black pepper
- 2 cans (15 ounce size) light or dark red kidney beans, drained, rinsed
- 1 can (10 ounce size) diced tomatoes and green chiles (optional)
In a large saucepan or Dutch oven, brown ground beef and onion; drain. Add celery, bell peppers, tomatoes with their liquid, tomato paste, garlic, salt, chili powder, cumin, cayenne and pepper. Bring to a boil. Reduce heat; cover and simmer 1 hour. Add kidney beans; simmer until thoroughly heated. Slow-cooker method: Brown ground beef and onion in skillet; drain. Combine with remaining ingredients in slow cooker, cover and cook on High setting for 3 to 4 hours. Cook\'s Notes: Add the optional tomatoes and green chiles along with the other tomatoes for additional \"heat\".
