Ready in: 30-60 minutes
- 1/2 cup butter, at room temperature
- 2 eggs, lightly beaten
- 1 cup sour cream
- 1 can (8.5 ounce size) drained whole kernel corn
- 1 can (8.5 ounce size) cream-style corn
- 1 box Jiffy corn muffin mix
- 1 cup shredded Swiss cheese
Preheat the oven to 350 degrees F. Lightly grease a 9x13 baking dish. In a bowl, mix together the butter, eggs, and sour cream until smooth. Stir in both kinds of corn and mix well. Stir in the muffin mix and cheese until just incorporated (do not overmix). Pour the batter into the prepared baking dish and place in the oven. Bake at 350 degrees F for 30-35 minutes or until the casserole is set in the middle. Serve hot.
