3 cups flour

1 tablespoon baking powder

1 tablespoon cinnamon

1 teaspoon salt

3 eggs

1 ½ cups sugar

½ cup cooking oil

1 tablespoon vanilla

2 cups chopped, peeled fresh peaches

1 cup chopped pecans

Grease bottom and about ½ inch up sides of two 8-by-4-by-2-inch loaf pans. Set aside.

In a large mixing bowl, stir together flour, baking powder, cinnamon and salt. In a medium bowl, beat eggs. Stir in sugar, oil and vanilla.

Add egg mixture to dry ingredients, stirring just till moistened (don’t overmix). Fold in peaches and nuts. Spoon batter into prepared pans.

Bake in 325-degree oven 55 to 60 minutes or until toothpick inserted near center of each loaf comes out clean. Cool in pans 10 minutes.

Loosen edges; remove loaves from pans. Cool completely on wire racks. Wrap and store overnight for easier slicing.

Makes 2 loaves, 16 servings per loaf.
