Serves/Makes: 1 cup
Ready in: 2-5 hrs

  • 1/2 cup unsalted butter, cut into pieces, at room temperature
  • 4 ounces soft goat cheese, such as Montrachet, at room temperature
  • 1/4 cup fresh parsley leaves
  • 2 tablespoons fresh dill
  • OR
  • 1 teaspoon dried dill
  • 2 tablespoons snipped fresh chives
  • freshly ground black pepper
  • Crackers, melba toast or thinly sliced French bread

Using a processor, blend all ingredients except crackers until smooth, stopping once to scrape down sides of work bowl, about 40 seconds.

Transfer mixture to 1-cup crock or bowl. Cover and refrigerate at least 2 hours. (Can be prepared 3 days ahead.)

Soften slightly at room temperature before serving. Serve with crackers.
