Herbed Goat Cheese Butter

Ready in: 2-5 hrs
- 1/2 cup unsalted butter, cut into pieces, at room temperature
- 4 ounces soft goat cheese, such as Montrachet, at room temperature
- 1/4 cup fresh parsley leaves
- 2 tablespoons fresh dill
- OR
- 1 teaspoon dried dill
- 2 tablespoons snipped fresh chives
- freshly ground black pepper
- Crackers, melba toast or thinly sliced French bread
Using a processor, blend all ingredients except crackers until smooth, stopping once to scrape down sides of work bowl, about 40 seconds. Transfer mixture to 1-cup crock or bowl. Cover and refrigerate at least 2 hours. (Can be prepared 3 days ahead.) Soften slightly at room temperature before serving. Serve with crackers.
