4 1/2 inch rounds of soft goat cheese, cut from a cold log
1 tbsp finely chopped parsley
2 tsp minced chives
2 tsp finely chopped thyme
1 tsp minced shallot
1 tsp Dijon style mustard
1 tbsp white wine vinegar
Salt and pepper to taste
1 tbsp olive oil
1 tbsp vegetable oil
2-3 cups mixed baby greens
Pecans, toasted and roughly chopped

Mix together the herbs. Roll each disk in the herb mixture, covering completely. Set aside at room temperature until ready to serve. This can be done a couple of hours ahead of time.

For the vinaigrette, mix together the shallot, mustard, vinegar, salt and pepper. In a slow steady stream whisk in both oils to form an emulsion. Adjust seasoning and keep refrigerated until ready to serve.

Place washed greens in a large mixing bowl and toss with the vinaigrette. Add just enough dressing so that the greens are very lightly coated. Divide lettuce among four plates and top each with a disk of goat cheese and a sprinkling of pecans. Serves 4
