5 medium size potatoes, cooked, peeled and
diced
3/4 cup crumbled blue cheese
1 cup chopped celery
1 Tbsp sugar
2 Tbsp chopped chives
3/4 cup sour cream
3/4 cup mayonnaise
3 Tbsp vinegar
salt and pepper to taste
Combine potatoes, cheese, celery and chives; mix well. Combine sour cream, mayonnaise, vinegar and sugar. Stir until sugar is dissolved; add potato mixture, season to taste. Toss together lightly. Refrigerate for 1 or more hours. Garnish with hard-boiled egg wedges or tomato wedges on a bed of shredded lettuce.
