Blue-Cheese Potatoes

1/3 cup shallots
1 Tbsp butter
1/2 cup blue cheese, crumbled
3 Tbsp snipped fresh parsley
3/4 tsp salt
1/4 tsp pepper
1 1/2 lbs cooked and cubed red potatoes
1 1/2 cups light cream

In a large skillet over medium0high heat, cook and stir the shallots in the melted butter for 2-3 minutes or until tender. Stir in the blue cheese and parsley, salt and pepper. Stir in the potatoes and cream. Bring mixture to boil; reduce heat. Simmer, uncovered, until thickened, stirring occastionally.
