Tilapia With Fresh Lemon And Cracked Pepper

- 2 tablespoons grated lemon rind
- 1 tablespoon olive oil
- 1 1/4 teaspoon black peppercorns
- 1/2 teaspoon kosher salt
- 2 cloves garlic, minced
- 4 fillets (6 ounce size) tilapia or halibut
- lemon wedges for garnish
Preheat oven to 425 degrees F. Combine grated lemon rind, olive oil, peppercorns, kosher salt and minced garlic. Rub over fish fillets. Bake at 425 degrees F for 7-8 minutes or until fish flakes easily with a fork. Serve with lemon wedges.
