1 lb ground beef
1/2 tsp salt
2 tsp cracked pepper
1 tbsp butter
2 tbsp minced shallots
1/4 cup dry red wine and beef broth
2 tbsp chopped parsley

Heat skilled over moderate about 5 minutes. Meanwhile, combine beef and salt, mixing lightly but thoroughly. Shape into 4 oval patties, 1/2 inch thick. Lightly press pepper into both sides.

Place patties in skillet and cook 6 minutes. Pour off drippings. Turn patties and continue cooked 6 minutes or until desired doneness. Remove to a platter.

Pour off drippings. Cook shallot in butter over high heat until reduced by half. Return patties to pan and cook 1-2 minutes. Sprinkle parsley over patties. Serves 4
