1 bag of Romaine hearts (3), shredded
2 c. sliced celery
1 c. chopped bell or red pepper, (Optional)
1 or 2 cans water chestnuts, sliced
3 bunches chopped green onions
1 lg. pkg. frozen peas
6 hard boiled eggs, sliced
2 c. mayonnaise or enough to cover and seal salad
2 c. grated cheddar cheese
1 lb. crumbled bacon
Make the salad in large pan (larger than 9 x 13) 24 hours prior to serving in the above order, seal with mayonnaise, put grated cheese and bacon bits on top. Cover and refrigerate overnight.
NOTE: Do not cook the peas; layer frozen
This will serve a LOT of people!!!
I make this one alot because you can prepare the day before!
