Pineapple Whiskey Salmon

2 Salmon fillets
1/4 cup pineapple juice
2 tbsp soy sauce
2 tbsp brown sugar
1 tsp whiskey
1/4 tsp coarse black pepper
1/8 tsp garlic powder

Mix together juice, soy sauce, sugar, whiskey, pepper and garlic until sugar is dissolved. Marinate the salmon for at least one hour.

Preheat oven to 400 degrees and line baking pan with foil. Place salmon skin-side down on foil and pour marinade over the top. Bake for 10-12 minutes or until fish flakes easily with fork.

Serves two.
