Pennsylvania Dutch Dumplings

- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 1/2 tablespoon baking powder
- 2 large eggs, lightly beaten
- 1/8 cup milk, plus more if needed
- 1 tablespoon oil or melted butter
Combine the flour, salt, and baking powder in a bowl. Stir the eggs, milk, and oil into the flour mixture with a fork. Add additional milk if needed to get the desired consistency. Bring chicken (or other) broth to a boil. Drop the dumplings by tablespoons into the broth. Reduce the heat to a simmer, cover the pan and let the dumplings cook for 10-12 minutes or until cooked through.
