  • 7 ounces elbow macaroni
  • 1/4 cup butter
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped celery
  • 1/3 cup chopped onion
  • 3 tablespoons flour
  • 2 teaspoons celery seed
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 1/2 cup milk
  • 2 cups shredded Cheddar cheese
  • 2 cups diced cooked ham
  • 1 cup cottage cheese
  • 2 eggs, slightly beaten
  • 1/4 cup chopped pimento

Cook macaroni. Drain.

Melt butter in saucepan. Add green pepper, celery and onion and cook over low heat 2-3 minutes. Blend in flour, celery seed, salt and pepper and remove from heat. Stir in milk gradually, then cook over medium heat, stirring constantly, till mixture comes to boil. Cook 2 minutes, stirring constantly. Add macaroni, cheddar cheese, ham, cottage cheese, eggs and pimento. Blend well.

Turn into buttered 2 quart casserole. Bake at 350 degrees F for 30 minutes. Remove from oven and let stand for several minutes. Garnish with parsley.
