2 cups sifted flour
3 teaspoons baking powder
1 teaspoon salt
6 tablespoons shortening
2/3 cup milk
Sift together flour, baking powder, and salt. Cut in shortening until mixture resermbles coarse corn meal [or small peas]. Add milk, while stirring. Turn out onto a lightly floured board, and knead lightly about 1/2 minute. Roll out or pat out to about 1/2-inch thickness. Cut with desired size biscuit cutter. Place close together in a greased pan for moist biscuits, or 1-inch apart for crusty biscuits. Bake at 450 for 12-15 minutes. Serve hot.
Notes: 1] You may butter the tops of biscuits for a buttery flavor, this should be done before baking. 2] To cut shortening into flour mixture you may use your hands [work quickly or shortening will melt prematurely]; a pastry blender. two knives; or a potato masher [believe it or not this really works!]
Variations:
1] For Quick Biscuits: Make as for above. Press into a square 8-inch pand and precut into squares. Bake at 375 until lightly browned.
