  • 2 tablespoons olive oil
  • 1 onion, thinly sliced
  • 1 green or red bell pepper or combination, seeded and sliced
  • 1 clove garlic, minced
  • 1 pinch dried oregano or basil
  • salt and pepper, to taste

Heat the oil in a skillet over medium heat. Add the onion, bell pepper, and garlic to the skillet. Cook, stirring frequently, until the vegetables are crisp-tender.

Season to taste with oregano or basil, salt, and pepper. Stir well, cook for 1-2 more minutes, then serve immediately.
