- 4 cups milk
- 1 egg
- 1 package (small size) cook and serve vanilla pudding mix
- 1 cup raw instant rice
- 1/4 cup raisins
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
Whisk together the milk and egg in a saucepan (off the heat). Stir in the pudding mix. Bring the mixture to a boil over medium heat, stirring constantly. Stir in the rice and raisins and cook, stirring occasionally, until it comes back to a boil. Remove the pan from the heat and let cool for 5 minutes, stirring twice during the cooling time. Divide the rice pudding between individual serving dishes. Sprinkle with the cinnamon and nutmeg. Serve warm. Or, chill the rice pudding and serve cold.
