Dressing
1/4 cup olive oil
3 tbsp balsamic vinegar
1 garlic clove, crushed
1 tsp salt and hot pepper sauce
1 small loaf coarse Italian bread stale
3 large ripe tomatoes, seeded and cut into chunks
1 large red onion, cut in half and sliced
1 large cucumber, cut into large chunks
large yellow and red bell pepper, cut into large pieces
1 cup mixed greens
1/2 cup fresh basil leaves and black olives, halved
1 tbsp capers

Combine dressing ingredients and set aside. In a large bowl, tear bread into large pieces to make about 4 cups. Add remaining ingredients and pour vinaigrette over top and mix well. Let stand 30 minutes before serving. Serves 4
