6 slices bacon
1/2 cup chopped onion
1/3 cup chopped green pepper
3 eggs, beaten
1 cup half & half
1/2 tsp salt
1 cup shredded Swiss cheese
1 (9 inch) unbaked pie shell

Heat oven to 350. Cook bacon until crisp; drain, reserving 2 tbsp fat. Cook onion and green pepper in fat until tender. Combine eggs, half and half and seasonings. Mix well. Add cheese, onion, green pepper. Pour into pie shell, crumble bacon over top and bake for 40 to 50 minutes. Serve with crackers or crostini.
