3 cups watermelon, pre-cubed and seeded
2 Anaheim peppers, Poblano chilies or jalapeno peppers seeded and chopped, or canned green chilies
1/4 cup cilantro, chopped
1/4 cup lime juice
1/3 cup red onion, minced
1 clove garlic, minced
2 tbsp fresh mint leaves, finely chopped
1/2 tsp sugar

Combine all ingredients in a large mixing bowl and stir well. Let chill in the refrigerator for at least 2 hours to allow flavors to blend. Serve with tortilla chips. Serves 6
