2 whole garlic bulbs
3 tbsp olive oil, divided
1/2 pack cup bottled roasted red pepper, drained
3 tbsp sun-dried tomato pesto or softened sun-dried tomatoes, diced
3 tbsp shredded parmesan or romano cheese
Salt and pepper
Crackers or sliced baguette bread

Preheat oven to 350. Cut about 1/4 inch off the top of each garlic bulb. Place in a square piece of foi. Drizzle about 1 tsp olive oil over the top of each bulb; wrap the foil over the bulbs, folding the edges of foil to seal the packet. Bake until garlic is soft, about 45 minutes. Let cool slightly, then removed cloves and squeeze garlic out of their skins.

Place garlic in a food processor. Add red peppers, pesto and remaining oil and cheese. Pulse briefly to make into a spread. Do not overprocess; the ingredients should remain distinctive (A mixer can be used instead of the food processor.) Season with salt and pepper to taste. Serve with crackers or bread. Serves 4
