3 (4 oz) cans chopped chilies
12 corn tortillas, cut into 1 inch strips
1 1/2 lb hot Italian sausage
1/2 cup chopped green onions and green pepper
1/2 cup milk
2 cups shredded Monterey jack cheese
8 eggs
1/2 tsp garlic powder, cumin, salt and pepper

Fry sausage and drain. Add chopped vegetables and continue to fry until sausage is brown and vegetables are tender. Combine eggs, and spices; mix well with a whisk. Grease a 13x9 inch baking dish and line with tortilla strips, sausage mixture, chilies and cheese. Repeat second layer ending with cheese. Pour egg mixture over top of casserole. Sprinkle with paprika. Add Roma tomato slices on top.

Bake at 350 for 45-50 minutes. Serves 10 Variation: Leave off the tortilla strips and use breakfast sausage instead. Can be layered in a slow cooker, covered and turned on low. Cook for 7-8 hours. Note: Can be made the night before and refrigerated. Let it warm back up about 15 minutes before starting to bake.
