2 tbsp butter
3 cups southern-style hash browns
3 cups shredded pepper jack cheese
1 tsp crushed oregano
6 eggs, beaten
1 (4 oz) can diced chili peppers
2 sliced medium tomatoes
1 cup parmesan cheese, shredded

Melt butter in a skillet and saute potatoes until lightly browned. Combine with cheese and next 3 ingredients in an 11x7 inch baking dish, sprayed with cooking spray.

Bake at 400 for 20 minutes or until potatoes are tender. Remove from oven and turn oven on broil. Arrange sliced tomatoes on top and sprinkle with cheese. Place under broiler until cheese melts. Serves 6.

NOTE: Chorizo sausages, sauteed and drained really well, is also good added to potato mixture.
