Crust
3/4 cup dry bread crumbs
1/2 cup grated parmesan cheese
3 tbsp butter, melted
Filling
4 (8 oz) pkg cream cheese, softened
1/2 cup heavy whipping cream
1 1/2 cups crumbled cooked bacon
1 cup oil-oacked sun-dried tomatoes, patted dry and chopped
1 cup shredded gruyere or swiss cheese
2 green onions, sliced
1 tsp ground pepper
4 eggs, slightly beaten
Optional toppings
shredded lettuce
chopped cherry tomatoes
crumbled bacon
Assorted crackers, for serving
Preheat oven to 325. Place a greased 9 inch springform pan on adouble thickness foil and securely wrap poin around pan.
Combine crust ingredients and press in bottom of pan. Place on a baking sheet and bake for 12 minutes. Let cool.
For filling: Cream together the cream cheese and whipping cream until smooth. Beat in next 5 ingredients. Add eggs; beat on low speed until just combpined. Pour over crust and place pan in a large baking pan; add 1 inch boiling water to larger pan for a water bath.
Bake for 45-55 minutes or until center is set and top appears dull. Remove pan from water bath and remove foil around pan. Allow to cool on a wire rack for 10 minutes. Loosen edges from pan with a knife. Cool 1 hour longer before refrigerating overnight.
Remove rim from pan top with favorite toppings. Serve with crackers.
Makes about 24 servings.
