GREEN BEANS AND PEARL ONION CASSEROLE

1 lb fresh green beans
2 cups pearl onions
2 tbsp olive oil and butter
2 cloves garlic, minced
1 shallot, chopped
2 bay leaves
3 cups assorted wild mushrooms, sliced (oyster, crimini and shitake)
Salt and pepper, to taste
1 tbsp dried thyme leaves
2 tbsp flour
3 cups milk
1 can fried onion rings

Blanch beans and onion in a pot of rapidly boiling water. Cook for 2 minutes or until beans have brightened in color. Remove from water and plunge in an ice bath. Drain and remove the skins from the onions, setting aside.

Coat a skillet with oil and butter over medium heat. Sweat the garlic and shallot down until they caramelize. Add bay leave and mushrooms. Stir to combine. Season with spices. Sprinkle mixture with flour to tighten up. Add milk and boil for 3 minutes to thicken. Place beans and onions in a greased casserole dish and pour the sauce over the vegetables.

Toss to make sure they are coated well. Bake at 350 for 30 minutes. Top with onion rings and continue to bake for an additional 10 minutes.
