2 tablespoons olive oil
2 or 3 garlic cloves, thinly sliced
1/2 large sweet onion, coarsely chopped
Kosher salt
12 cups fresh spinach, loosely packed
1/2 cup crumbled good-quality feta cheese
1 tablespoon chopped fresh dill
Freshly ground black pepper to taste
Lemon wedges, for serving

In a large heavy skillet over medium heat, stir oil and garlic. Cook, stirring, 3 to 4 minutes, until garlic is fragrant and just starting to turn golden. Add onion and a pinch of salt; cook, stirring often, until tender, about 5 minutes.

Add spinach, in 2 or 3 batches, sprinkling each batch with a little salt and cook, tossing until all spinach is wilted and tender. Spoon into serving dish, sprinkle with feta and dill and a little pepper. Serve with lemon wedges.

Makes 2 servings, or 2 1/2 cups.
