CHEDDAR, HAM AND BROCCOLI CASSEROLE

12 oz elbow macaroni
1 small bunch broccoli, cut in bite-size
2-3 tbsp olive oil
1 medium onion, chopped
1 cup chopped mushrooms
1/2 small red bell pepper, cut into julienne strips
6 oz smoked ham, diced
2 cloves garlic finely chopped
1/2 tsp salt
1/8 tsp black pepper
1 cup milk
4 tsp flour
1-2 tsp minced fresh marjoram leaves
2-3 sprigs fresh thyme, crushed
2 cups sharp cheddar cheese, shredded
Salt and pepper, to taste

Cook macaroni in large pot of boiling water following package directions. Stir in broccoli 2 minutes before end of cooking.

Meanwhile, heat oil in large, deep, nonstick skillet over medium-high heat. Add onion, mushrooms bell pepper and ham; cook, stirring, until onion has softened, about 2 minutes. Combine the milk, flour and seasonings in a small bowl; mix well and add the skillet, stirring constantly until the sauce thickens.

Preheat oven to 350. Grease a casserole dish with cooking spray and place the cooked pasta and broccoli in the dish. Pour the ham mixture on top and sprinkle with the cheddar. Season with salt and pepper, more if needed. Bake for 15 minutes or until heated through. Serves 4
