Makes 4 to 6 servings.
2 c. chopped broccoli
1/2 c. minced onion
1/2 c. grated carrot
3 T. butter
3 T. flour
1/2 tsp. paprika
1/2 tsp. dry mustard
3 c. chicken broth
2 c. milk
2 c. shredded Old Cheddar cheese
Steam broccoli for approximately 6 minutes. Save liquid.
Make a roux in saucepan with butter, flour and spices.
Dissolve bouillon in broccoli water and add to roux with onion, carrot, broccoli, and milk.
Bring to boil, stirring constantly, until thickened.
Add grated cheese, stirring until melted.
