1 cup flour
1/2 cup chilled butter
1 cup finely grated Gruyere
2oz can of anchovy filets in oil, drained and roughly chopped
1/2 cup pitted black olives, roughly chopped
1/2 tsp cayenne pepper
Sea salt
Place flour, butter, cheese, anchovies, olives and cayenne in a food processer. Pulse until the mixture forms a dough. Wrap the dough and chill for 20 minutes.
Roll out dough thinly on a lightly floured surface. Cut the dough into 2 inch wide strips and then cut across each strip diagonally to make little triangles. Place on parchment lined baking sheets and bake at 400F for about 8 to 10 minutes. Cool on a wire rack. Sprinkle with sea salt and serve.
