36 dates, pits removed
15 slices bacon, cut into thirds
36 marcona or other blanched whole almonds
Roasted pepper or roasted tomato sauce (optional)

Preheat oven to 450.

Stuff an almond inside each date. Close and wrap a piece of bacon around each date and place on baking sheet lined with parchment paper.

Bake until the bacon becomes crispy (about 20 to 25 minutes). Serve with a roasted pepper or roasted tomato sauce, if desired.
