1/4 cup unsalted butter, melted
2 tbsp finely chopped roasted red bell pepper, pat dry before chopping
3/4 tsp paprika

1/4 tsp salt
1/8 tsp pepper
1 head cauliflower, cut into florets (about 6 cups)
1/4 cup unseasoned dry bread crumbs
In a small bowl, stir together butter and bell pepper. Stir in seasonings until blended. Cook cauliflower in a large pot of boiled salted water 1-3 minutes or until almost crisp-tender. Rinse under cold running water; drain well. In a large bowl, toss cauliflower with red pepper butter. Add bread crumbs; toss to coat. Heat oven to 425. Place cauliflower in a baking sheet; bake 15 minutes or until hot and tender. Stir before servings. Serves 8
