2 heads cauliflower, cut into florets
1/4 cup olive oil
2 garlic cloves, sliced
salt and freshly ground pepper

Prehet oven to 425 degrees. In a large bowl, toss cauliflower, oil, and garlic. Season with salt and pepper and toss to coat once more. Transfer cauliflower to a large baking sheet and roast until golden brown, 25 to 35 minutes, tossing halfway through.

Makes 12 servings.
