2 pounds very firm Roma Tomatoes
Thyme
Basil
Oregano
Rosemary
Salt
Pepper
Olive Oil

Wash and slice the tomatoes. Place the tomatoes on a parchment paper lined cookie sheet. Sprinkle the tomatoes with olive oil on one side of the tomatoes only. Next sprinkle the tomatoes with the herbs of your choice on both sides of the tomatoes. Roast uncovered in a 250 degree oven for 3 hours. If you want your tomatoes to be dried more you can roast them up to 6 hours.

NOTE: This is a very simple recipe and the tomatoes are just delicious. I keep mine in a glass container in the refrigerator up to three months.
