Fresh Roma tomatoes, split lengthwise
Olive oil, to coat
Kosher Salt and pepper, to taste

Place split tomatoes in a bowl and cover generously with olive oil. Season with salt and pepper. Place on sheet pan and place in the oven set at 200 degrees for 6-8 hours or at 350 for 2 1/2 hours.
