1/2 cup fresh mushrooms, chopped
2 tbsp mayonnaise
1 tbsp minced onion
2 tbsp chopped parsley
Salt and pepper, to taste
3 slices favorite cheese
6 flounder fillets
Old Bay Seafood seasoning
Italian bread crumbs.

Preheat oven to 425. Mix together mushrooms, 1 tbsp mayonnaise and next 4 ingredients. Place 1/2 slice of cheese on each fillet. Divide mushroom mixture evenly over cheese topped fish. Roll each jelly-roll fashion. Spread each with remaining mayonnaise and sprinkle with Old Bay Seafood seasoning.

Place seam-side down on a shallow baking dish sprayed with cooking spray. Sprinkle with bread crumbs and bake for 20 minutes or until fish is opaque and crumbs are brown. Serves 4-6.
