1 pound sirloin steak cut into 1-inch cubes
Juice of 4 limes (about 1/2 cup)
1/2 cup orange juice
1/4 cup tequila (optional and NOT included in nutrition information)
1 clove garlic, minced
1 teaspoon salt-free lime-chili powder (Mrs. Dash makes one)
1/4 cup chopped fresh cilantro plus extra for garnish
1 onion, cut into 1-inch pieces
1 red bell pepper, cut into 1-inch pieces
Cherry tomatoes (one for the end of each skewer)
4 6-inch low-fat corn tortillas
1 ounce shredded low-fat cheddar, divided into 4 portions
4 tablespoons fat-free Greek yogurt
1 avocado, peeled and sliced
Sliced fresh lime for garnish
Place sirloin cubes into a zip-close plastic bag. Add lime juice, orange juice, tequila (if using), garlic, chili powder and 1/4 cup cilantro. Close the bag and turn it a few times to make sure marinade is mixed and coats meat. Leave at least 3 hours or overnight.
Heat grill to high. Take meat out of marinade, and discard marinade. Skewer meat with onions and peppers. Top the pointed end of each skewer with one cherry tomato. Grill skewers to desired degree of doneness. Serve each skewer with a tortilla, some cheese, 1 tablespoon yogurt and 1/4 of the sliced avocado. Serves: 4
