2 lb chicken thigh meat cut into approximately 3/4 inch cubes
1 tbsp olive oil
Zest and juice of 4 limes
4 cloves of garlic minced
1 Jalapeno pepper seeded and diced
1/4 tsp cayenne pepper
1 medium onion cut into ¾’ pieces
Salt and pepper to taste
6-12 bamboo skewers
Soak bamboo skewers in water.
Place cut chicken in bowl and mix with olive oil, zest, juice, garlic and peppers. Cover and refrigerate for 1 to 2 hours.
Alternate placing chicken and onion pieces on skewer. Fill each skewer to leave only a 1/2" on each end. Season skewers with salt and pepper. Grill on medium heat for 3 minutes, rotate a quarter turn, grill 3 more minutes, repeat until all 4 sides have been grilled. Serve with cotija stuffed Anaheim chili, grilled avocado and pico de gallo Serves 4
