3 cups peeled, cubed potatoes
1 medium onion, chopped
4 celery ribs, chopped
4 cups water
4-6 tsp chicken bouillon granules
1 can cream of chicken soup
1/2 (16 oz) Velveeta exican process chese spread, cubed

Cook first 3 ingredients in 4 cups water in a large saucepan for 10 minutes or until potatoes soften. Stir in soup and bouillon; return to a boil and reduce heat. Simmer, stirring occasionally for 20 to 25 minutes. dd cheese, simmer, stirring often, until cheese melts and is heated through. serves 6-8
