1/2 cup sugar
2 tsp ground cinnamon
1 (17 1/4 oz) pkg frozen puff pastry dough, thawed
1 egg, beaten

Preheat the oven to 375. Coat cookie sheets with nonstick cooking spray. In a shallow bowl, combine the sugar and cinnamon; mix well and set aside. Place the 2 sheets of pastry dough side by side lengthwise on a work surface and pinch the middle seam together. Brush the dough with some of the beaten egg and sprinkle with 5 tbsp of the cinnamon-sugar mixture. Roll one narrow end jelly roll-style into the center.

Repeat with other end. Slice into 12 pieces. Brush one side of each slice with the remaining beaten egg and dip in the remaining cinnamon-sugar mixture. Place coated side up on the cookie sheets. Bake for 25 to 28 minutes, or until golden. Allow to cool for 5 minutes, and then remove to a wire rack to cool completely. 1 dozen
