1 tbsp butter
8 eggs, separated
20 oz sour cream
1/2 cup milk or half-and-half
4 cups Monterey jack (I do half Monterey jack and mild cheddar)
1/2 tsp garlic, minced
1/2 tsp pepper
1 small each green and red bell peppers, chopped
1 onion, chopped
1 Anaheim pepper, seeded and chopped
1 1/2 cups flour
Olive oil
1 tomato, thinly sliced, for topping
Diced ham or Canadian bacon
Preheat oven to 325. Saute onion and pepper in olive oil; set aside.
In the bowl with the yolks, add the milk, flour, garlic and pepper; mix well. Add sour cream, cheese and vegetable to the mixture.
In the bowl with the egg whites, beat until stiff. Fold the beaten whites into the other mixture until blended together.
Grease a baking dish with butter. Pour the mixture into the baking dish and place in the hot oven. Bake for 45-60 minutes, turning the dish occasionally, until the top starts to crack. Three quarters of the way through baking, top with tomatoes and ham. Serves 8
