1 lb lean ground beef
1/4 cup chopped onion
1/4 cup chopped green pepper
1 (16 oz) can tomatoes, drained & diced
1 (12 oz) can whole kernel corn, drained
1 (8 oz) can tomato sauce
1/2 cup sliced stuffed olives
1-2 tsp chili powder
1 cup coarsely crushed corn chips
1/2 shredded cheddar cheese
Place beef in 2 quart micro proof casserole; break up with fork. Add onion and green pepper. Cook on Hi (Max power) 9 minutes or until beef is no longer red, drain.
Stir to break up beef. Add tomatoes to meat mixture. Stir in 14 cup reserved tomato liquid, corn, tomato sauce, olives, and chili powder. Cover. cook on Hi (Max) 6-8 minutes, or until heated through. STir, Sprinkle with corn chips and cheese. Cook on 50 (defrost) 2 minutes, or until cheese is melted. Let stand 3 minutes before serving.
